March 15th, 2011

This was a very sad day for me. My Grandmother that I loved more than anything in the world passed away. She was my inspiration to go to Culinary school. I always remembered me growing up and always being around her cooking with her since I was a little girl. She has taught me many things about life, Never hold Grudges and always have forgiveness. I know she is proud of me and watching over me as we speak. Its hard being on the other coast of the united states but I sure am going home next week. All the family is coming together and celebrating what a beautiful life she had. It was what she wanted, us to not be sad and be happy shes in a better place. I'm thankful my last words with her was she was so proud of me and that I was living her dream and that she loved me and I loved her. I'm okay with that I wouldn't have it any other way. I'm glad all of my family was there to be by her side and tell her I send my love and ill be okay. There are many things i will never understand but all I know is she will ALWAYS be with me no matter where she is. I love you grandma Claire and I hope I made you proud of what I have accomplished so far in my life. and I will always miss you. May you rest in peace <3

Chef Daisy saved the day!!

I was having trouble making my Italian butter cream today :/. But my genius Pastry Chef, Chef Daisy, Saved the day! After all the Trial and Error I FINALLY assembled my cake. Chiffon Cake infused with Brandy with an Italian Butter cream & Raspberry JamSince I really cant give you a slice over the internet, Here's your slice!!! I will be posting my chocolate mousse cake tomorrow! I really hope you enjoy seeing all the different types of dishes I have been making!

The Wonderful World of Baking


Well Today was hectic! Lemon Meringue Pie, boy do I say PAIN IN MY BUTT! This pie is a lemon curd tart made with a sweet pâte sucrée short crust with Swiss Meringue on top. I wish I took a picture when the peaks of my meringue were standing tall. By the time I got home my meringue deflated. The next thing I made was just something I was experimenting with in class, Peanut Butter Pastry Cream. Im in the process of making a Peanut butter cream pie with bananas. The Crust will be a Oreo cookie crust, Peanut butter cream in the center, Whip cream on top with grated dark chocolate and carmelized bananas as a Garnish! YUM!

Just another day..

Well I finally made a blog to capture some of my journey through culinary school. I have been in school for 6 months now and I have learned so much. Things I have never heard of, techniques, and the broad variety of food. Never knew how much cooking was a passion on mine. Cooking to me is an art, creating and plating a dish is like a master piece. It brings me peace and serenity. As of now I am in Baking & Pastry, and today we made Eclairs. Sorry to say I was warned by my chef to NEVER give out this recipe... SORRY!!! But I hope you Enjoy!!
